Description

These easy Roasted Pumpkin Seeds with Parmesan turn fresh pumpkin seeds into a quick and simple savory snack with crisp edges and a warm garlic aroma. The trick is drying the seeds before roasting so the oil clings lightly and the Parmesan toasts instead of steaming. It’s one of my best healthy ideas for holiday snacking, meal prep or a casual party, and the salty cheese finish makes every crunchy handful taste Search focus: how to make roasted pumpkin seeds with parmesan.

Ingredients

Scale
  • 2 cups pumpkin seeds
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup Parmigiano-Reggiano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon flat-leaf parsley

Instructions

  1. Rinse 2 cups of cleaned pumpkin seeds and remove every strand of pumpkin flesh. Pat them firmly until the surfaces feel mostly dry. Then spread them in one loose layer and dry them at 300°F for 6 minutes. Stir once at minute 3 so trapped moisture can escape from both sides. Keep the seeds separate instead of piling them because overlapping pockets hold steam. The shells will shift from shiny and wet to pale and matte. You’ll hear only a faint dry rustle when you stir them and there shouldn’t be visible moisture underneath. Go much past 8 minutes and the thinner seeds can start coloring before the seasoning goes on. Dry at 300°F first because surface moisture blocks oil from coating the shells evenly.
  2. Move the warm seeds into a bowl while they’re still around 120°F. Add 1 tablespoon extra-virgin olive oil, garlic powder, smoked paprika, kosher salt and black pepper. Toss for 60 to 90 seconds with a folding motion from the bottom upward. Scrape around the sides halfway through so no spice paste stays stuck in one spot. Every shell should look lightly slick rather than drenched. The pale seeds will turn a warm orange-gold as the paprika disperses. You’ll smell garlic as soon as it hits the warm oil and the spices should cling without forming wet clumps. If you pour in extra oil, the seeds steam and stay chewy instead of crisping later. Toss while the seeds are warm because thin oil coats hot dry shells more evenly. Preheat the oven to 325°F now so it’s fully hot by the time the pan goes in.
  3. Spread the seasoned seeds back into one loose layer and raise the oven to 325°F. Roast for 18 to 20 minutes. At minute 10, stir thoroughly and move the darker edge seeds toward the center. Keep the layer thin so hot air reaches most shells. (My first batch stayed crowded and the center seeds were still chewy, so spreading them wider fixed it.) By minute 18, many edges should look deep golden while the centers stay lighter. You’ll hear a dry crackle when the seeds move and smell toasted garlic instead of raw spice. Go beyond 22 minutes and the smallest shells can taste bitter. Roast at 325°F because moderate heat dries the centers before the seasoning scorches.
  4. Scatter 1/2 cup finely grated Parmigiano-Reggiano over the hot seeds and toss twice to distribute it unevenly. Return them to the 325°F oven for 3 to 4 minutes. Then remove them and add 1 tablespoon chopped fresh flat-leaf parsley. Cool for 10 minutes before serving because the shells crisp further as steam escapes. Keep some Parmesan visible in small toasted clusters. The cheese should look pale gold with a few deeper amber crumbs between the seeds. You’ll smell nutty Parmesan and toasted garlic when the tray leaves the oven. If the cheese stays longer than 5 minutes, the fine shreds can turn bitter and dark. Toast the Parmesan briefly because its proteins brown faster than the pumpkin seed shells.

Notes

Pro Tips:

  • Dry 2 cups of cleaned seeds at 300°F for about 6 minutes before seasoning. A matte shell is your visual cue that surface moisture has escaped.
  • Keep the oil to 1 tablespoon for 2 cups of seeds. More oil can leave the shells greasy and slows the crisping process during roasting.
  • Spread the seeds across a 13-by-18-inch baking sheet in one loose layer. Crowding traps steam and can leave the center seeds chewy after 20 minutes.
  • Stir the seeds once around minute 10 at 325°F and move darker edge pieces toward the center. This helps the batch color more evenly.
  • Add the 1/2 cup Parmigiano-Reggiano only for the final 3 to 4 minutes. Longer roasting can darken the fine cheese before the seeds finish crisping.
  • Cool Roasted Pumpkin Seeds with Parmesan for 10 minutes before storing or serving. The shells become noticeably crisper as residual steam escapes.

Storage: Store completely cooled Roasted Pumpkin Seeds with Parmesan in an airtight container at room temperature for up to 5 days. For longer storage, refrigerate them for up to 10 days but expect a little less crunch. You can also freeze the cooled seeds in a tightly sealed freezer bag for up to 2 months. Press out excess air before sealing because freezer moisture can soften the shells and dull the toasted Parmesan flavor. To restore the crunch, spread the seeds in one layer and warm them at 300°F for 5 to 7 minutes. Then cool them uncovered for 5 minutes before eating. Don’t microwave them because steam builds quickly and makes the shells chewy. Discard the batch if you notice a rancid oil smell, damp clumps, visible mold or an unusually bitter flavor that wasn’t present when the seeds were freshly roasted.
