Description

These Blueberry Cream Cheese Bars are the easy treat I keep coming back to when I need quick dessert ideas that still feel a little special and homemade for brunch and potluck days. They have a simple buttery crust and the best creamy center with juicy blueberries in every bite while still feeling healthy enough for a balanced treat. Make them for holiday trays or simple meal prep and enjoy a quick slice all week with coffee or tea.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 6 tablespoons unsalted butter melted
  • 16 ounces cream cheese softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • 2 tablespoons all purpose flour


Instructions

  1. Graham cracker crumbs and part of the sugar are moistened with melted butter until the dry crumbs change into damp sandy clumps with darker golden patches throughout. The mixture still looks a little uneven and rustic which is exactly what gives the crust a homemade feel.
  2. The crumb mixture is pressed into the baking dish in an uneven layer with rough edges and a few thicker spots and then the cream cheese filling is spread over it. The top changes from crumbly and matte to smooth and pale with gentle swirls and little ridges where the filling settles over the crust.
  3. Blueberries are loosely scattered across the creamy surface and some sink in slightly while others sit higher which creates natural spacing and small clusters. The bars now look brighter and more textured with deep blue purple pops against the pale filling and a more playful uneven pattern.
  4. As the bars bake the filling puffs gently and turns firmer around the edges while the berries wrinkle and release a little juice into inky streaks. The crust deepens in color and the top develops light golden patches and tiny cracks which makes the whole pan look clearly baked and wonderfully homemade.
  5. Once cooled the slab is cut into bars and one portion is plated so the layers show clearly from the crumb base to the creamy center and the berry studded top. The cut edges are a little jagged and the blueberries sit unevenly across the surface which gives the final piece a natural and inviting finish.
